Chile-Lime Veggie Noodles

Made this meal exactly following the directions. It was good, had nice flavor from the limes and a satisfying crunch from the cabbage. The eggs were new for me and worked well this way! It's a good not so special healthy weeknight meal. If you like a bit of kick try finding Shichimi. It's a blended spice from Japan. I sprinkle it on all of my Asian stir-fries just before eating. It's a blend of chili pepper, orange peel, black and white sesame seeds, Japanese pepper, ginger, and seaweed. It's awesome! Took this dish to another level.

Veg Hakka Noodles

Veg Hakka Noodles is an Indo-Chinese preparation that is made by tossing boiled noodles and stir-fried vegetables in Chinese sauces. The vegetables give it an enjoyable crunchy texture and the Soy and Chilli sauces give it a distinctive flavor. This dish is very popular across all of India and is often served in Indian Restaurants or in parties. Spicy variations of this are often sold by street vendors as chowmein. Veg Hakka Noodles are also quite healthy since they are loaded with veggies and very little oil goes into their preparation. I have added onions, colored Bell Peppers (Capsicum), Cabbage, Carrots and Spring Onions to this dish. You can make them even healthier by using whole wheat noodles.

Spicy-Sweet Sambal Pork Noodles

These weeknight noodles are inspired by the silky richness of meaty tomato sauce and the fiery, tangy-sweet flavors of pad kee mao (a.k.a. drunken noodles). It's full-on explosive flavor in under an hour. Made it for dinner tonight, expecting to have leftovers for lunch tomorrow. Cleaned the whole pot! I doubled the sugar and used brown sugar. I also used yakisoba noodles I had in the pantry. This is good for breakfast, lunch, dinner, snack, hangover- whatever!
