This superfast flatbread pizza features fresh farmer’s market produce like zucchini, cherry tomatoes, and basil. Easy and delicious! Try to shred the zucchini, sauteed it with olive oil, and spread it on a toasted flatbread. It got kind of, almost, creamy? Obviously, it was a little weird. But totally good. You'll love it!

Pizza Dough

This pizza dough is very easy to put together, and it's enough for four 10-inch-diameter pizzas. It is best if prepared in advance and refrigerated overnight. Refrigerated dough will keep several days. It may also be successfully frozen and thawed. Keeping preweighed individual frozen dough balls on hand makes it easy to have pizza whenever you like. (Thaw dough overnight in the refrigerator or leave at room temperature for several hours.)

This recipe provides a delicate, extraordinarily flavorful dough that will last in the refrigerator for up to a week. It rewards close attention to weight rather than volume in the matter of the ingredients and asks for a mixture of finely ground Italian pizza flour (designated “00” on the bags and available in some supermarkets, many specialty groceries and always online) and regular all-purpose flour. This recipe can help us enjoy our new gluten-free lifestyle. My absolute favorite food is PIZZA!!! Every Friday night we have a family pizza picnic! Where we watch a movie, lay down on a blanket (to protect the carpet) and eat pizza in the living room. Which is a special treat for everyone because our family doesn't usually eat in the living room. As I am sure you know, "gluten-free" ANYTHING, especially pizza crust, isn't exactly affordable!
