For this dish, we prefer dry fettuccine noodles to freshly made because the pasta holds up better to the sauce. The instructions assume that you are using dry noodles. If you use fresh, adjust timing accordingly. Fettuccine Alfredo is the best served as soon as you make it, but it will keep, covered, in the fridge for up to 5 days. It can be reheated with a little bit of water or butter in a saucepan over low heat. It typically does not freeze well.

S’Mores Pumpkin Pie

If Fall were to have an official flavor, it would be pumpkin spice. EVERYTHING has been pumpkin spiced. Sometimes, it's hard to remember where the craze started: pie. What else would you do with leftover pumpkin pie? This S’Mores Pumpkin Pie is a mashup between my s’mores mini tarts and a classic pumpkin pie: graham cracker crust, soft chocolate ganache, classic pumpkin filling, and a heaping mound of toasted marshmallow fluff. You can take this idea and use your classic pie recipe instead of mine, although keep in mind you’ll probably have a bit of excess as a result of the extra layer of chocolate on the bottom.
