Spaghetti Squash Egg Nests

Baked “nests” made with spaghetti squash and filled with perfectly cooked eggs. The “nests” come out of the oven with crispy bits on top and tender centers – like the squash version of hash browns. Spaghetti squash egg nests are low carb and work well with Paleo, Keto, and Whole 30 diets too!

Peach Mango Banana Bread

The bread is ridiculously moist, soft, and bursting with peaches and mangos in every bite. It’s like a tender peach-mango coffee cake with the comforting, homey qualities of banana bread. So good. It’s an easy, no mixer recipe that goes from bowl to oven in minutes. While it bakes, the bread makes your house smell like a bakery.

Mason Jar Banana Bread

Banana bread made in a jar. Why? Pretty darn crazy, huh? Why would anyone want to make banana bread in a mason jar? Well, for a couple of reasons: I love making these beauties as gifts. I can make a bunch at a time and send them over to neighbors as a nice gesture, pass them out as party favors, give them as gifts at Christmas, as teacher gifts, or store in my pantry. If sealed properly, they can keep for a few months in the freezer! Think food storage people! You can decorate the jars with a circle of batting and fun fabric under the jarring and add a pretty label. So darn cute!

Strawberry Shortcake Banana Bread

This brainchild combines two of our favorite desserts: banana bread and strawberry shortcake ... and strawberry shortcake means strawberry season. Expect us to be bingeing on the berries from now until September.

Breakfast

Dark Chocolate Raspberry Banana Bread

This banana bread is the moistest of moist. I know you probably hate that word or are sick of me saying it, but I simply loathe dry banana bread. I'd rather eat bowl broccoli for breakfast than a piece of dry banana bread. This banana bread obtains its moisture from 2 eggs and a little yogurt (in addition to the bananas and brown sugar). The 1/3 cup of yogurt goes a long way! I typically use plain Greek yogurt, but regular yogurt will be just fine. Sour cream makes a nice substitution as well. Butter gives the bread a nutty, rich flavor that is enhanced with the bananas and chocolate. And a touch of vanilla extract rounds out the banana’s sweet flavor. Each bite is truly mouthwatering.

Cream Cheese Filled Banana Bread

This is the BEST homemade banana bread recipe! This cream cheese banana bread tastes like it has cheesecake baked in! Soft, fluffy and tastes a-amazing!! Tip: Tent the pan with a sheet of foil draped over it at the 30-minute mark if you feel the tops and sides will become too browned before center cooks through. Baking times will vary based on the moisture content of bananas, cream cheese, climate, and oven variances. Bake until done; watch your bread, not the clock.
