Tuna and Cherry Tomato Spaghetti

Featuring tuna, this six-ingredient pasta is a quick and easy meal - and it goes down swimmingly! Canned tuna is so commonplace you might think it's crazy to make your own. OK, so call this tuna “conserved” instead. It’s not just a change of names. It’s incredibly easy to make and when you’re done, you can use it in all kinds of dishes, from a salad with white beans and arugula to this Tuna and cherry tomato pasta.

Ingredients :
  • 1 cup Small fresh basil leaves
  • 2 cans Tuna in chilli oil, drained, flaked
  • 400 g Italian whole cherry tomatoes
  • 3 Garlic cloves, crushed
  • 1 Medium yellow capsicum, thinly sliced
  • 2 tbsp. Olive oil
  • 350 g Spaghetti
Directions :
  1. Cook pasta in a large saucepan of boiling, salted water following packet directions until tender. Drain.
  2. Meanwhile, heat oil in a saucepan over medium heat. Add capsicum and garlic. Cook, stirring, for 2 minutes or until capsicum has softened. Add tomatoes. Cook, stirring, for 2 minutes or until tomatoes have just collapsed.
  3. Add pasta, tuna and basil. Cook, tossing, for 2 minutes or until heated through. Season with salt and pepper. Serve.
