Shrimp Risotto
This shrimp risotto recipe is an elegant dish for any occasion. A lemon risotto is topped with lightly sauteed shrimp for an elegant anytime kind of meal.

- ½ small yellow onion finely diced
- 1 cup arborio rice
- 2 cloves garlic minced
- ½ cup white wine or extra broth
- 3-4 cups chicken broth warmed, more as needed
- 2 tablespoons salted butter
- ½ cup shredded Parmesan cheese plus extra for serving
- 1 teaspoon chopped fresh parsley
- ¾ pound medium shrimp peeled, deveined and tails removed
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
