Pumpkin Pie Energy Balls

These "energy balls" are exactly what they sound like: Perfect little bites of energy that will help you curb cravings for something sweet when you need something. Made with oats, coconut, almond butter, and pumpkin puree, they're healthy and satisfying. These Pumpkin Pie Energy Bites pack all the fall flavor you want without the added sugar you don't. Perfect for beating holiday temptation!

Ingredients :
  • 1 tsp. Pumpkin pie spice
  • 2 tbsp. Pumpkin seeds
  • 2 tbsp. Chia seeds
  • 2 tbsp. Maple syrup
  • 1/4 cup Golden raisins
  • 1/3 cup Unsweetened pumpkin puree
  • 1/2 cup Unsweetened almond butter, warmed
  • 1/2 cup Unsweetened coconut flakes or shavings
  • 1 cup Old-fashioned rolled oat
Directions :
  1. In a large bowl, mix oats, coconut, almond butter, pumpkin puree, raisins, maple syrup, chia seeds, pumpkin seeds, and pumpkin pie spice until combined.
  2. Using your hands, form mixture into 2” balls. Transfer to a plate or small baking sheet.
  3. Refrigerate balls until set, 20 to 30 minutes.
  4. Store in the fridge in an airtight container until ready to eat.
