Muffin Tin Turkey Meatloaf

The best part about this mini meatloaf is the fresh taste mashed potatoes slathered on top. It's Thanksgiving in a muffin tin. Try a savory dish that looks like a muffin with our Potato-Topped Muffin Tin Meatloaf. This muffin tin meatloaf may earn you the title of rock-star mom. It's delicious! Yummy!

Ingredients :
  • Freshly chopped parsley, for garnish
  • 1 tbsp. Brown sugar
  • 1/4 c. Ketchup
  • Freshly ground black pepper
  • Kosher salt
  • 1 tbsp. Tomato paste
  • 1 tsp. Thyme
  • 1 tsp. Worcestershire sauce
  • 1 clove Garlic, minced
  • 2 Large eggs, beaten
  • 1/2 c. Italian breadcrumbs
  • 2 pounds Ground turkey
Directions :
  1. Preheat oven to 350℉ and spray a muffin tin with cooking spray. In a large bowl, mix ground turkey with breadcrumbs, eggs, and garlic. Add Worcestershire, thyme, and tomato paste and mix well. Season with salt and pepper. Divide mixture evenly between 12 muffin tins.
  2. In a small bowl, whisk together ketchup and brown sugar. Brush half the ketchup mixture on top of the meatloaf. Bake until cooked through, 35 minutes. Remove from oven and brush meatloaf with remaining half ketchup mixture.
  3. Spoon O, That’s Good! Garlic Mashed Potatoes on top and garnish with parsley.
