Healthy Sweet Potato Hash

This hash can upgrade any breakfast and comes together in one. single. pan. Yes, even the bacon! This easy Sweet Potato Hash recipe is a healthy, delicious, vegetarian side that is easy to make and can even be a full meal. For breakfast, lunch, or dinner, this sweet potato hash protein bowl is packed with tons of veggies and protein.

Ingredients :
  • Freshly chopped chives, for garnish
  • 6 slices Bacon, chopped
  • 3 sprigs Rosemary
  • 1/4 tsp. Paprika
  • Freshly ground black pepper
  • Kosher salt
  • 3 tbsp. Extra-virgin olive oil
  • 3 cloves Garlic, minced
  • 1 Large onion, chopped
  • 2 Bell peppers, chopped
  • 3 Large sweet potatoes, peeled and chopped
Directions :
  1. Preheat oven to 425℉. On a large rimmed baking sheet, toss sweet potatoes with bell peppers, onion, garlic, and oil. Season with salt, pepper, and paprika. Scatter rosemary and bacon on top.
  2. Bake until sweet potatoes are crispy on the outside and soft on the inside, about 45 minutes, shaking the pan halfway through.
  3. Garnish with chives to serve.
