Healthy Blueberry Waffle

Finally a delicious Healthy Blueberry Waffle with 100% whole grain flours and no refined sugar or butter. Don’t forget to make extra, so you can eat healthy waffles all week! This blueberry waffle recipe is about to become a staple in your house. Breakfast is served! Just try it out!

Ingredients :
  • 1 cup Unsweetened almond milk
  • 2 tbsp. Coconut oil, at room temperature
  • 1/4 cup Maple syrup
  • 1 tsp. Vanilla extract
  • 2 Eggs, large
  • 1 cup Mashed banana
  • Dry
  • 1 pint Fresh blueberries
  • 1/8 tsp. Salt
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Baking powder
  • 1 1/2 cups White whole wheat flour
Directions :
  1. First, preheat your waffle iron to medium heat.
  2. In a large bowl, mix together all dry ingredients. Then add wet ingredients, minus the coconut oil.
  3. Partially melt the coconut oil and add that to the batter. I microwave my coconut oil for about 20 seconds. Mix until smooth.
  4. Spray waffle iron with coconut oil cooking spray on both sides. Then, scoop in about 2/3 cup of batter. Close the waffle iron, flip, and let cool for about 1 minute and 30 seconds.
