Grilled Chicken Salad

Grilled Chicken Salad Recipe – perfect juicy grilled chicken, grilled corn off the cob, tomatoes, lettuce, avocado and onion make for a delicious summer salad! A simple oil and vinegar dressing is the perfect finishing touch. While barbecue chicken, baked beans, burgers and franks rule summer backyard cookouts, I also find myself craving light and fresh meals. Salad is simply the perfect choice!

Ingredients :
  • 4 cups Chopped Romaine lettuce
  • 4 tablespoons Apple cider vinegar
  • 1/4 cup Olive oil
  • 2 Grilled chicken breasts
  • 2 Corn on the cobs grilled
  • 1 Avocado
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Dried oregano
  • 2 cups Chopped cherry tomatoes
  • 1/2 cup Chopped red onion
Directions :
  1. In a large salad bowl, combine lettuce, cherry tomatoes, onion and avocado.
  2. Cut corn kernels off the cobs and add to salad. Toss gently together.
  3. In a small measuring cup, whisk together oil, vinegar, salt, pepper and oregano. Pour over salad and toss gently to coat.
  4. Slice or chop grilled chicken breasts.
  5. Place salad on serving plates. Arrange half of the sliced grilled chicken breast on top of the salad, on each serving.
  6. Serve immediately.
