Frito Pie

Frito Pie is a crowd-pleasing casserole with a rich beefy base (similar to chili) topped with heaps of cheese and… you guessed it… FRITOS!!

Ingredients :
  • 1 pound lean ground beef
  • 1 yellow onion finely diced
  • 1 packet taco seasoning or 3 tablespoons homemade taco seasoning
  • ½ cup water
  • 1 tablespoon chili powder
  • 1 (10 ounce each) can diced tomatoes with chilies such as Rotel, or salsa
  • 1 ½ cups tomato sauce
  • 1 cup frozen corn kernels thawed
  • 1 (15 ounce each) can red kidney beans drained and rinsed
  • 1 (9.25 ounce each) bag Fritos® corn chips divided
  • 2 cups shredded Mexican cheese blend divided
  • sour cream for serving, optional
Directions :
  1. Preheat oven to 350°F. Grease a 9 x13-inch casserole dish.
  2. Brown ground beef and onions, drain fat. Stir in taco seasoning, chili powder, and water.
  3. Bring to a boil, reduce heat and simmer until thickened. Stir in diced tomatoes, tomato sauce, corn, & beans. Simmer an additional 5 minutes.
  4. Add 4 cups of corn chips to the bottom of the prepared dish. Sprinkle with 1 cup of cheese.
  5. Spread beef mixture over top and top with remaining cheese.
  6. Bake 18 to 20 minutes or until cheese is melted.
  7. Top with remaining chips and desired toppings.
