Fajita Burgers
This healthy burger recipe features a spicy fajita burger slathered with a spicy chipotle mayonnaise and topped with roasted Anaheim peppers and a delicious slaw. Serve it on an oblong bun.
Ingredients :
- 4 thin slices red onion
- 4 slices tomato
- 1 cup shredded green cabbage
- 2 roasted Anaheim or poblano peppers, (see Tip)
- 4 French rolls, preferably whole-wheat, split and toasted
- ½ cup shredded Monterey Jack cheese
- 1 tbsp. chopped chipotle chile in adobo, (see Ingredient Note)
- 1 tbsp. lime juice
- ⅓ cup reduced-fat mayonnaise
- ¼ tsp. salt
- ½ tsp. freshly ground pepper
- ½ tsp. dried oregano, preferably Mexican
- 1 tsp. ground cumin
- 1 tbsp. chili powder, preferably New Mexican
- 2 tsp. minced garlic
- ¼ cup chopped scallions
- ½ cup finely chopped red onion
- ¾ cup chopped fresh cilantro, divided
- 1 pound 90%-lean ground beef
