Cranberry Chicken Salad

This simple and tasty Cranberry Chicken Salad is a great fridge staple for a quick, protein-filled snack or sandwich filling. It’s also perfect for picnics and potlucks! Chicken salad can be made a million different ways, but this is my classic, the one I come back to again and again.

Ingredients :
  • 1/3 cup Chopped red onion
  • 2/3 cup Chopped celery
  • 3 Cooked and chopped crockpot chicken breasts
  • 2 tablespoons Freshly squeezed lemon juice
  • 1/2 cup Mayonnaise
  • 1/4 teaspoon Salt
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Black pepper
  • 1/2 cup Dried cranberries
  • 20 Leaves fresh basil sliced
Directions :
  1. Ideally, refrigerate the chicken salad for an hour or two before serving, so the flavors can meld and the cranberries can plump up. Then enjoy!
  2. Pour the dressing all over the chicken, then toss well to coat.
  3. In a large bowl, combine the chicken breast, celery, red onion, basil, and cranberries.
  4. In a small bowl, whisk to combine the mayonnaise, lemon juice, mustard, salt, and pepper.
