Buffalo Chicken Meatballs

Homemade buffalo chicken meatballs pack a bold, tangy punch, making them a flavorful twist on a classic favorite.

Ingredients :
  • 1 pound ground chicken
  • 1 cup buffalo sauce divided
  • ¾ cup Panko bread crumbs
  • 1 teaspoon garlic powder or 1 clove finely minced garlic
  • 1 rib celery finely diced
  • 1 green onion minced
  • 1 egg
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons honey
  • ranch dressing or blue cheese dressing, for serving
Directions :
  1. Preheat the oven to 400°F. Line a rimmed baking sheet with parchment or foil.
  2. In a large bowl add ground chicken, ¼ cup buffalo sauce, Panko, garlic powder, celery, green onion, egg, salt, and pepper. Mix until just combined.
  3. Divide chicken mixture into 24 equal portions and form into balls. Place on prepared baking sheet and bake 20 minutes or until meatballs reach 165℉.
  4. In a saucepan, combine the remaining ¾ cup buffalo sauce, butter, and honey over medium heat. Simmer for 5 minutes.
  5. Drizzle buffalo sauce over meatballs. Serve with ranch dressing and fresh carrot or celery sticks.
