Barbecue Chicken Spaghetti Squash Boats

These healthy barbecue chicken spaghetti squash boats are easy to make and fun for the entire family! With homemade barbecue sauce and wholesome ingredients, they will leave everyone feeling satisfied. Naturally gluten-free! All you need to do is bake the chicken breasts plain, cut them up and toss in sauce, add into cooked and deseeded spaghetti squash boat, top with cheese, and then bake!

Ingredients :
  • Cilantro for garnish
  • 1/4 cup Chopped red onion
  • 1/4 cup Chopped green onion
  • 1 cup Mozzarella cheese
  • 2 tbsp. BBQ sauce
  • Pepper
  • Salt
  • 2 tbsp. Olive oil
  • 2 Large chicken breasts
  • 1 Baked spaghetti squash, halved and de-seeded
Directions :
  1. Preheat oven to 375℉ and line a baking sheet with parchment paper or foil.
  2. Prepare chicken breasts by brushing with olive oil and sprinkling with salt and pepper.
  3. Bake in the oven for ~25 minutes and let rest once done.
  4. Prepare spaghetti squash by taking out all seeds and using a fork to fluff the spaghetti-like strands.
  5. Once the chicken is cooled, cut in cubes and toss in BBQ sauce.
  6. Add BBQ chicken to spaghetti squash boat and top with mozzarella. Bake in the oven for 10 minutes or until cheese is melted.
  7. Top with onions and cilantro. Serve immediately!
