Air Fryer Coconut Shrimp

Air fryers are slowly winning us over. First with these amazing air fryer pickles (obvs), and now with this amazing coconut shrimp. They get totally crispy, and the spicy mayo goes perfectly with the sweet coconut. Match made in heaven! These coconut shrimp are an air fryer recipe which means shrimp perfectly cooked to crispy coconut perfection. Coconut and panko crumbs give this air-fryer shrimp its crunch. It's perfect for an appetizer or for your main meal.

Ingredients :
  • 1 tbsp. Thai sweet chili sauce
  • 1 tbsp. Sriracha
  • 1/2 cup Mayonnaise
  • Shrimp
  • 1 pound Large shrimp, peeled and deveined, tails on
  • 2 Large eggs, beaten
  • 1/2 cup Shredded sweetened coconut
  • 1 cup Bread crumbs
  • Freshly ground black pepper
  • Kosher salt
  • 1/2 cup All-purpose flour
Directions :
  1. In a shallow bowl, season flour with salt and pepper. In another shallow bowl, combine bread crumbs and coconut. Place eggs in a third shallow bowl.
  2. Working with one at a time, dip shrimp in flour, then eggs, then coconut mixture.
  3. Place shrimp in the basket of an air fryer and heat to 400°F. Bake until shrimp is golden and cooked through, 10 to 12 minutes. Work in batches as necessary.
  4. In a small bowl, combine mayonnaise, Sriracha, and chili sauce. Serve shrimp with dipping sauce.
