Angel Hair Pasta

Easy 30-min dinner! Shrimp sauteed in olive oil with ginger, garlic, and colorful red and green bell pepper tossed with angel hair pasta. The shrimp are sautéed in olive oil with finely diced red and green bell pepper, along with garlic and grated ginger, and then tossed with angel hair pasta. So festive!If you are working with frozen shrimp, to defrost place in a large bowl, cover with an inch or two of cold water, stir a couple of teaspoons of salt into the water, add a few ice cubes. Let sit until defrosted.

Ground Beef Stroganoff

Hamburger stroganoff made with ground beef in a sour cream mushroom sauce, with onions, parsley, paprika, served over egg noodles. Do you like beef stroganoff? Hamburger stroganoff is a great way to enjoy beef stroganoff but without breaking the bank. Instead of using strips of top sirloin, we use ground beef.

One of my new spring top favorites is this zucchini spaghetti with avocado pesto sauce, roasted pine nuts, and parmesan cheese. It’s super light, fresh, juicy and creamy; with a pleasant crunch of nuts and parmesan cheese. Fast and easy recipe for a late-night dinner on the balcony or terrace with an ice-cold bottle of rose. Chicken Marsala Pasta

This is another recipe that’s been a family favorite of ours for years. We like the sauce so much we now make enough to go over an entire pasta dish instead of just pouring it over chicken (how Marsala sauce is traditionally served). And this dish is also versatile so feel free to switch it up depending on your preferences. It’s pictured with asparagus (that was roasted with garlic and olive oil), but it would also be great topped with steamed broccoli or raw spinach leaves as well. Mushrooms would be another fabulous addition along with some roasted garlic. Get creative and use the ingredients that you have on hand!
