As California Avocado season winds down, I wanted to use these amazing little green goodies uniquely. A creamy, thick stack of avocado pancakes bursting with summer fresh blueberries seemed perfect. The avocado pancake recipe itself is pretty basic and can be easily adapted to gluten-free using a simple swap of a gluten-free all-purpose flour blend.

Beet Colored Red Velvet Pancakes

This red velvet pancakes recipe is colored with 1/2 cup of beets - perfect for Valentine's Day breakfast. Beets are one of the most nutritious foods out there. They have 50 times the antioxidant content of a carrot. Studies have shown that beet juice is so nutritious that it is scientifically proven to improve athletic performance. I made the pancakes with half whole wheat flour and half-light spelled flour and they were delightfully fluffy and tender. However, you could certainly make these with all white flour if you prefer. You would likely achieve a slightly higher rise and the red color will be even more vibrant as a result. If you wish, you can also shape your batter into a heart pancake right in the skillet!

These gluten-free banana pancakes have a great texture and are banana-sweetened. They’re 100% whole grain and dairy-free with a vegan option. If you’ve got some bananas that are about to go bad, this is what you want to do with them (though these paleo chocolate banana muffins would also be a great choice!). The bananas don’t need to be banana bread ripe, though. It’s fine as long as the peel has some black spots on it.
