BBQ Chicken Fettuccine Alfredo

When it comes to busy weeknights, this BBQ Chicken Fettuccine Alfredo is my go-to dinner recipe! This flavor-packed pasta is so easy to pull together and can be on your dinner table in less than 40 minutes. When it comes to feel-good comfort dinners, pasta often makes it to the list. The idea of fusing soft pasta with rich, delicious alfredo sauce can make anyone drool. So, how about a creamy chicken Fettuccine pasta for a change? Something that is super easy to make and can be prepared with everyday ingredients. Something that requires minimal prep work and quick cooking time. And what could that be? Lunch

Chicken Marsala Pasta Bake

I was reading a magazine the other day when saw a mention of a classic chicken marsala recipe, and I have been thinking about (and craving) chicken marsala ever since. It’s one of those dishes that I order at restaurants, but rarely think to make at home. To fix up my insatiable craving, I got to work on making my own spin on this rather simple chicken dish. My version gets tossed with al dente campanelle pasta, sautéed mushrooms and shallots, lots of parmesan cheese and fresh parsley, and baked for just a few minutes in individual serving bowls. I’m happy to report there were lots of leftovers that I’ve been cheerily chipping away at for lunch this week! Get the full recipe below:

Lunch

Cold Fighting Chicken Noodle Soup

When I was sick, my mom would make me this heartwarming chicken noodle soup. It was soothing when I had a cold, but this soup is a bowlful of comfort on any chilly day. The most soothing, comforting, cozy soup for the flu season! Quick/easy to make, you'll be feeling better in no time! Try it out!

Lunch

Classic Napolitana Spaghetti

This classic Italian Spaghetti dish is confirmation that the simple things in life are often the best (and even better if you know a few tricks!). In this recipe, I shave the garlic into very thin discs using a mandolin slicer, mashes up the best-quality Italian tinned tomatoes with his hands, and tears the basil, adding it last so it stays fresh and green.

Breakfast

Banana Pudding Banana Bread

I often ask myself, who thinks up this stuff? So, I thought, okay, I'll play along since banana bread is one of my favorite things to enjoy with a cup of hot tea! My recipe for banana bread has a bit of a twist. I like to combine the creamy flavors of banana pudding into my bread batter and top it off with a wafer streusel. Enjoy it warm with butter, or cold the next day, either way, it's banned malicious! Vanilla pudding mix is the secret ingredient in this dessert-like loaf. It makes it super moist (sorry!) and adds that classic nostalgic banana pudding taste.

Breakfast

Moist Banana Bread

Moist and delicious banana bread recipe. Easy to make, no need for a mixer! Ripe bananas, butter, sugar, egg, vanilla, baking soda, and flour. It really is the best banana bread recipe, period. You can mix everything in one bowl, you can vary the amount of sugar or bananas. And the secret to its great flavor? Melted butter.

Breakfast

Zucchini Banana Bread

You should try this Zucchini Banana Bread recipe from a friend at work and now it's one of my favorites. It makes three small loaves, but they freeze very well. Moist and flavorful. You can make 3 mini loaves in 60 minutes. Great for breakfast, the lunch box or a midnight snack!
