Fried Cornbread Fritters

Also known as Johnny Cakes or Hoecakes, fried cornbread fritters are a staple side dish in the southern U.S. They look a bit like a cross between cornbread and a pancake, and they don't take much effort to whip up for a quick side dish. You can make them as big or as little as you like; however, keep in mind that the smaller fritters are much easier to flip. Serve the fried cornbread fritters alongside chili, fried chicken, beans and greens, or any other Southern-inspired cuisine.

Mexican Cornbread

This Mexican cornbread features diced green chiles, sweet corn, and cheddar cheese. We like to use fresh Anaheim or poblano chile peppers, but you can substitute canned green chiles. The chile peppers have a tough outer skin, so we char them on a dry skillet and then steam them in a paper bag. Steaming them in the bag makes it easy to slip the skins off, and charring them develops plenty of sweet, smoky flavor. If you're using canned chiles, the skins are already off so you can skip that step.

S’Mores Pumpkin Pie

If Fall were to have an official flavor, it would be pumpkin spice. EVERYTHING has been pumpkin spiced. Sometimes, it's hard to remember where the craze started: pie. What else would you do with leftover pumpkin pie? This S’Mores Pumpkin Pie is a mashup between my s’mores mini tarts and a classic pumpkin pie: graham cracker crust, soft chocolate ganache, classic pumpkin filling, and a heaping mound of toasted marshmallow fluff. You can take this idea and use your classic pie recipe instead of mine, although keep in mind you’ll probably have a bit of excess as a result of the extra layer of chocolate on the bottom.

Bourbon-Pecan Pie

Add a splash of bourbon to give your favorite pecan pie some extra punch. This is a classic and simple recipe given a Southern kick with a little bourbon. The alcohol will evaporate when you bake the pie, and you’re left with a richly flavored, gooey dessert, intensely sweet with a baseline of vanilla. You do need both light and dark corn syrup for this -- using only one or the other will change the pie’s flavor.

Cream of Coconut Pecan Pie

Cream of Coconut Pecan Pie is just the pecan pie for coconut lovers. Made with cream of coconut and a little shredded coconut, this pie has lots of coconut flavor. It’s a delicious twist on pecan pie that is perfect for the holidays. The cream of coconut gives this Cream of Coconut Pecan Pie a creamy texture and adds to its sweetness. Be sure to use cream of coconut, not coconut milk. It is usually found with the cocktail mixers at the store. You will need to open the can and mix it really well before measuring. It will be solid on the top and liquid underneath. This recipe uses a frozen pie shell, but you could use a homemade pie shell. The filling only takes minutes to prepare. Just mix everything in a large bowl and pour it into the crust and then the pie needs 40 to 45 minutes to bake. It needs to be refrigerated before slicing to help set the filling up so it is best to make it a day in advance.
