Marshmallow Pumpkin Pie

Marshmallow Pumpkin Pie in a gingersnap crust is a must-make fall recipe for pumpkin lovers. This pie is so easy and the marshmallows give it a light texture and help it set up well. The gingersnap crust adds to the fall flavor and compliments the pumpkin perfectly. Except for the crust, which only needs 10 minutes, this pie is no-bake, making it a great addition to your Thanksgiving menu when there’s so much competition for that oven space. The marshmallows are heated in a saucepan with the pumpkin and some spices until melted. Once cooled, the whipped topping is folded in for a creamy, dreamy filling with just the right amount of fall flavor and sweetness.

Coconut Pumpkin Chiffon Pie

A no-bake, light and airy Coconut Pumpkin Chiffon Pie served chilled and topped with a rich and decadent mascarpone whipped cream is a welcome change from plain old pumpkin pie. This is the first time I’ve ever combined pumpkin and coconut in a dessert. What a delicious combination! Do you have the same desserts year after year on your Thanksgiving table? Pumpkin pie is a dessert that should be enjoyed more than just one day a year.

Lunch

Chocolate Chip Pecan Pie

This spectacular pie combines the "traditional" pecan pie with a distinctive chocolate flavor. As simple to make as it is sinfully good: Sprinkle a store-bought pie crust with chocolate chips and pour in a traditional pecan pie filling. Bake until the crust and pecans are browned, then serve with a homemade whipped cream once cooled.

Lunch

Bourbon Glaze Rose Apple Pie

This pie may seem difficult and I’m not even gonna pretend and say it’s easy and you can make it in an hour. And today, here I am pushing this pie situation with none other than a glaze! I’d like to defend this glaze. This one starts with burnt sugar and then it has a bit of water for thinning and bourbon in it. So it’s a little different. Way different, I’d say. I gave the whole thing a sprinkling of smoked sea salt because I couldn’t help myself. This is like the pie version of these Bourbon Caramel Apples with Smoked Sea Salt. It’s doable.

Breakfast

Veg Mayonnaise Sandwich

Veg Mayonnaise Sandwich Recipe – Quick and easy to make a sandwich that can be served as breakfast, snack or can be packed into the lunch box. As the name says, it has a mix of vegetables mixed with mayonnaise. For some Indian touch, I have added little green coriander chutney to the sandwich mixture. It tastes too good. If making for those who do not like spicy taste, you can skip it. It still taste good without chutney too.
