Grilled Cherry, Goat Cheese, and Arugula Pizza

Tart cherries, creamy goat cheese, peppery arugula, and sweet balsamic drizzle are a delicious combination of flavor on top of this grilled pizza! If you’ve never grilled pizza dough it’s actually quite simple. The main things to remember are to oil the grates of your grill well so the dough doesn’t stick and brush the pizza dough with olive oil. Make sure you have your tongs or a spatula nearby so you can flip the pizza dough when it’s ready. Once the dough is flipped you need to work quickly to get the toppings on the pizza. Luckily this cherry and goat cheese pizza is very simple so all that’s required is sprinkling on the crumbled goat cheese and scattering on the cherries. The length of time the pizza needs to grill will depend on your grill. Mine took about 2-3 minutes per side.

This pizza dough is very easy to put together, and it's enough for four 10-inch-diameter pizzas. It is best if prepared in advance and refrigerated overnight. Refrigerated dough will keep several days. It may also be successfully frozen and thawed. Keeping preweighed individual frozen dough balls on hand makes it easy to have pizza whenever you like. (Thaw dough overnight in the refrigerator or leave at room temperature for several hours.)

Gluten Free Pizza Crust

This recipe can help us enjoy our new gluten-free lifestyle. My absolute favorite food is PIZZA!!! Every Friday night we have a family pizza picnic! Where we watch a movie, lay down on a blanket (to protect the carpet) and eat pizza in the living room. Which is a special treat for everyone because our family doesn't usually eat in the living room. As I am sure you know, "gluten-free" ANYTHING, especially pizza crust, isn't exactly affordable!
