Originating in France, ham quiche Loraine is made with bacon and cheese. This low carb version uses ham, caramelized onions, Gouda and a unique low carb crust to create a beautiful presentation. This quiche originates from the Lorraine region of France where it is typically made with bacon, onions, and custard of eggs, milk, cream, and cheese. Quiche Lorraine became popular when I was a kid and I remember it served at brunches and Ladies Luncheons. I like the play between the salty ingredients of ham and cheese against the sweet caramelized onions. A little nutmeg adds a nice dimension to the custard and gives it a more sophisticated flavor.

Basic Pie Crust

My basic pie crust recipe that I have been using for years. This is the best pie crust recipe that is flavorful and flaky – just like a pie crust should be! I have tried so many different pie crust recipes, it’s ridiculous. But every single time, I come back to this recipe. It’s a family recipe, a version used by my family. I have changed it up a little bit after finding what works best for me (half butter instead of all shortening, par-baking the crust with weights). Pie crust tends to be intimidating to people, but the actual process is quite simple. It may take some practice to make it pretty (a skill I am still working on to this day) but making the crust is usually as simple as mixing ingredients.

Healthy Pumpkin Pie

I was set on creating a healthy pumpkin pie recipe because I’m 100% sure we don’t need to have pumpkin pie made with sweetened condensed milk. Instead of a traditional crust, I thought I’d go with a gluten-free version using the ever-amazing gluten-free graham crackers. I love being able to create recipes that everyone can enjoy during the holiday season, especially when you can’t tell that it’s gluten-free or dairy-free! If we’re making a graham cracker crust, why wouldn’t we make it with chocolate graham crackers?! The best graham crackers out there and very underrated. Truth be told, my favorite part of this pumpkin pie isn’t just the ingredients. The texture is out of this world creamy, rich and velvety smooth. Not only that, but the good amount of spices in this recipe won me over; it’s gingery with a hint of nutmeg and cloves. LOVE LOVE LOVE.
