Pumpkin French Toast

Thick layers of brioche get soaked in a mixture of egg, milk, pumpkin puree, and vanilla and then topped with creamy pumpkin butter for the most fall brunch EVER. In a rectangular baking dish, whisk together the eggs, milk, pumpkin puree, vanilla, cinnamon, and pumpkin pie spice. If you like your french toast on the sweeter side, you can add a bit of brown sugar too. Dip the bread into the mixture, flip sides and then place on the hot skillet.

Vegan Cauliflower Fried Rice

This easy cauliflower fried rice is fluffy, filling and amazing. I use a combination of shredded cauliflower and broccoli for the rice. Broccoli adds some color and also the texture that keeps the shredded cauliflower fluffy. Add veggies of choice, some sauce/flavor, saute, fluff and done. I served this with some baked lime soy tofu and eggplant that is coming up soon. Any stir fry will work if you can keep some of this fried rice to serve for later. This cauliflower fried rice is best served fresh for maximum fluffiness and neutral cauliflower flavor. Cauliflower flavor tends to get stronger in storage.

Strawberry Jam French Toast

The thing I loved the most about the sweet breakfasts were that they were usually pancakes or French toast, and they were always topped with some sort of fun compound butter. Salted caramel butter on banana pancakes? Yep. Chocolate butter to accompany the croissants? That happened too. And then, of course, fresh strawberry-flecked butter for French toast. I was hooked.

Easy Paleo Meatloaf

If you don't know much about the paleo diet, meatloaf feels like the one thing you can eat—because, well, meat. But several ingredients in traditional meatloaf aren't paleo-friendly (looking at you, breadcrumbs), so we rejiggered our classic meatloaf recipe, adapting it to become paleo-friendly. Meatloaf is bound together with eggs and breadcrumbs. Since wheat products aren't allowed on paleo, we swap in almond flour, which helps bind the meat mixture without any gluten. Ketchup has added refined sugars, so we make our own by stirring together a mixture of tomato paste, apple cider vinegar, and spices that's way better than the real thing. If you're going paleo, you need a bottle of coconut aminos. It's basically like soy sauce—with a rich, salty, umami-like flavor that'll punch up any meal. And, bonus, it's made from the sap of coconut palm trees, so it's paleo-approved. Meatloaf is, well, kinda like banana bread or a cake in that it needs time to rest in the pan to help it set before getting turned out onto a serving plate. Don't skip the resting time—you'll risk the meatloaf crumbling or falling apart. Give it a few!

Breakfast Pizza

Breakfast Pizza – kale pesto, sun-dried tomatoes, sausage, cheese, herbs, and eggs baked right on top. Super easy and adaptable recipe for brunch! Bake the pizza on the highest rack for 6-10 minutes, until the crust is baked, the cheese is melted and bubbly, and the eggs are cooked to your liking (I like the yolks to be soft). Remove from oven, let it stand a few minutes, and cut into slices. Yum!

Individual Turkey Meatloafs

This is the perfect way to make your meatloaf a little more elegant and refined. Is that possible with a meatloaf? The name kind of kills any chance at sophistication, doesn’t it? How about…… Hmmm. Nope. Can’t think of another name for it. But it sure is tasty. I make these turkey meatloaf cupcakes every year for April Fools Day. My kids think that it's hilarious to have cupcakes for dinner, only to find out(to their delight, of course) that those cupcakes are made of savory turkey meatloaf and the frosting is mashed potatoes. These meatloaf cupcakes(or muffins, if you’re not too keen on mashed potatoes) start with a ground turkey meatloaf base, loaded up with carrots, onions, parsley. They are glazed with a sweet ketchup sauce and then baked. After they are done they can be topped with a piping of whipped mashed potatoes and a garnish of parsley. The meatloaf is a killer. Seriously, it’s one of my favorite meatloaf recipes of all time.

Tonga Toast

Who’s ready for some TONGA TOAST?! This is French toast on steroids. It’s time to dig into our Tonga Toast! Supergiant banana-stuffed sourdough bread is battered and deep-fried, then dusted with cinnamon sugar. You can add any type of sauce, syrup or butter. The portion of the Tonga Toast itself at either location is MAMMOTH. The sourdough bread is sliced super-thick, and the egg-batter (similar to any French Toast style recipe) lends a definite richness to the dish.
