Breakfast

Steel Cut Oats

We love steel-cut oats, but we don't like standing over the stove stirring them all morning. Let your Instant Pot do the work for you and you will be rewarded with creamy and pleasantly chewy oats. Works great with any type of milk! It’s a perfect breakfast recipe which is healthy and delicious!

Shrimp Pico Rice Skillet

A twist on a Texas favorite, made with succulent shrimp, spicy jalapeños and rice, my Shrimp Pico Rice Skillet is a homage to my South Texas roots. This one-skillet dish starts off on the stove-top and is completed in the oven, served warm with plenty of fresh lime juice.

Italian Meatloaf

Meatloaf is sometimes seen as an old school dish but this Italian Meatloaf recipe really brings a new aspect to the classic meatloaf recipe you’re used to! Keep reading to find out how to make meatloaf for a weeknight dinner for the whole family! As a young adult, the thought of loaf-shaped meat didn’t sound appetizing, not to mention something ladled with salty gravy and an ice cream scoop of mashed potatoes. It looked and sounded brown… dull. But this is delicious!

Breakfast

Almond Butter Stuffed French Toast

Stuffed French Toast! Let’s do this! I LOVE French toast! My mom made us French toast a lot when I was younger and the love has only gotten stronger (for the French toast and my mom). My basic tried and true French toast recipe can be found HERE if you’re interested. But today, we’re stuffing our french toast with Barney Butter Almond Butter and it’s magical! First, as always should be done with French toast, let's talk about the bread. The bread selection is VERY important! I’m a BIG fan of Challah Bread (sometimes called egg bread). I pretty much always make my French toast with challah bread. You want a bread that’s firm enough to stay intact after it has been soaked in the liquid but you also want bread that’s spongy and rather soft. Brioche and French bread are also good options.

Easy Baked Italian Meatloaf

The Best Easy Baked Italian Meatloaf Recipe is a tried and true family favorite bursting with rich meaty, garlic flavor and baked in a marinara sauce for a meatloaf dinner that doesn't dry out and is low carb and gluten-free! To make the perfect meatloaf, you have to be sure it’s cooked all the way through. To do that, a thermometer is essential so you don't have to slice it open to know if it’s done!

Breakfast

French Toast Kabobs

The kids will enjoy helping to prepare this fun way to serve and eat French toast. Use seasonal fruit or whatever you have on hand to make these colourful and nutritious kabobs. Buy unsliced bread and slice it yourself or ask to have it thickly sliced at the bakery or grocery store. Day-old bread is best for French toast; when dipped in the egg mixture, it will hold its shape better than fresh bread. Use the bread of your choice (e.g. white, raisin, sourdough). Omit cinnamon; use chocolate milk instead of white milk. Drizzle kabobs with maple syrup, fruit syrup or chocolate sauce. Sprinkle cinnamon sugar over both sides of French toast before cutting into cubes. Sprinkle kabobs with icing sugar.

Breakfast

Eggnog French Toast

Can't get enough eggnog? Make this Eggnog French Toast! It's a great way to use up leftover eggnog in a festive holiday breakfast. This recipe gets double egg goodness with the egg bread and the eggnog. Challah is a tasty choice but any bread will work well. French toast is a good way to use up day-old bread. I can’t drink too much eggnog all by itself because it’s too rich on its own for my palate. However, I can have endless amounts of things made with eggnog, such as this Eggnog French Toast!
