Classic French Toast

Classic French toast is a quick and delicious breakfast treat. Enjoy topped with maple syrup, jam, fresh berries or a dusting of icing sugar. Orange French Toast: Substitute orange juice for milk. Blend in 2 tbsp (30 mL) sugar and 2 tsp (10 mL) grated orange peel. Serve with warmed marmalade thinned with a little orange juice. Use egg bread (challah), raisin bread or croissants. Add a little sugar or maple syrup to egg and milk mixture. Add spices (cinnamon, nutmeg, allspice) to the egg and milk mixture. Sprinkle French Toast with cinnamon sugar after cooking. The recipe can be doubled or tripled. If cooking a large batch, keep cooked slices warm by transferring to a baking sheet and holding in 200˚F oven while cooking remaining slices.

Corned Beef Hash and Eggs

Sunday breakfasts have always been special in my house. It's fun to get in the kitchen and cook with the kids. No matter how many new recipes I try, they always rate this corned beef hash recipe No.1! This was excellent! If you have a turnip and potatoes leftover from your boiled dinner, you can just incorporate them into the dish. Excellent use of leftovers and eggs - I would make this again. This one has gone to the top of my breakfast list.

Chile-Lime Veggie Noodles

Made this meal exactly following the directions. It was good, had nice flavor from the limes and a satisfying crunch from the cabbage. The eggs were new for me and worked well this way! It's a good not so special healthy weeknight meal. If you like a bit of kick try finding Shichimi. It's a blended spice from Japan. I sprinkle it on all of my Asian stir-fries just before eating. It's a blend of chili pepper, orange peel, black and white sesame seeds, Japanese pepper, ginger, and seaweed. It's awesome! Took this dish to another level.
